For 8 people
Preparation 50 minutes
400 gr. of flour
100 gr. of durum wheat semolina
125 gr. of breadcrumb
70 gr. of grated grana
150 gr. of ground for salami
100 gr. of roasted beef
5 gr. of macaroons
10 gr. of sultana grape
1 clove of garlic
1 tablespoon of chopped parsley
Salt and pepper
80 gr. of butter
100 gr. of bacon
1oo gr. of grated grana
Some bay leaves
flour, semolina, eggs, salt and add some water to obtain
a homogeneous compound.
Leave it rest for at least half an hour.
For the filling: make brown the butter, the ground for
salami, the peeled and chopped pear. Add the roasted beef,
the parsley and the garlic. Cook for a while.
Pour the mixture into a bowl and add the grana, the breadcrumb,
the egg, the macaroons, salt und pepper.
Amalgamate the compound.
Spread the puff and make 10cm discs. Put in the center
a spoon of stuffing then bent the dough disc on the filling,
close the border.
Cook in salt water, drain and keep them in a bowl. Add
grana, butter previously cooked with bacon and bay leaves.
